Rasam is a sweet south Indian soup dish prepared with tamarind, clarified butter and other ingredients used for flavoring. Rasam is a thin spicy and slightly sour soup usually served with bread. Rasam can be spiced with different ingredients like tamarind, mustard seeds, cumin and other dry-roasted South Indian spices. Rasam is very popular among south Indian people and there are various Rasam recipes in existence. In this article I am describing few Rasam recipes that I have tried in my relatively short stay in south India.
Rasam Darbha is a traditional Rasam recipe of Andhra Pradesh, India. This Rasam recipe is prepared with a blend of fresh tamarind, roasted cumin, dry red chillies, almonds, raisins and cardamom. Rasam is a thick soup and can be served with Paratha or plain rice. Rasam Darbha should be frozen upon preparation. It is advisable to place Rasam in a food container that will prevent it from melting.
Rasam Teekha: Rasam Teekha is another famous south Indian recipe of Andhra Pradesh. Rasam Teekha is cooked in a clay oven, while mixing the ingredients and grilling it. Rasam is then served with steamed rice and eaten with puffed rice. Rasam is believed to have originated during the time of Charvani or Vadaverj, the great duke of Vijayanagara, in the 16th century.
Rasam Tandoori: This Rasam dish is used to cook thick pure earthen clay oven chutney. Rasam Tandoori has a deep and intense flavor, which is difficult to describe in words. Rasam Tandoori is usually prepared with meat, fish or chicken and seasoned with Tandoori Masala. Rasam Tandoori is best served with plain rice erased.
Rasam Richa: Rasam Richa is a south Indian traditional dish. Rasam Richa is a thin porridge that is flavored with yogurt and milk. Rasam Richa is usually served with steamed rice. Rasam Richa is made on a cast iron tawa that is placed over a fire. A sweet aroma from the clay oven is released to create a delicious flavor. Rasam Richa is now available on cookbooks and restaurants.
