Braised meats are typically very tender, so they are usually cut up into smaller pieces. The biggest difference between stewing and braising, though, is that braising requires much lower temperatures than stewing. A low temperature of about 180 degrees on a stove top is often used to cook the meat, and it is important to brown the pieces thoroughly before turning them.
Another way to cook stewed foods is called pot roasting. This method requires a pot or wok, a large pan full of water on top and a burner on the side. All you do is put the stewing or braised ingredients in the pot, add water to cover everything, place it on the heat and bring to a gentle boil. Usually, this is done in the oven, but it can also be done on a stove top.
If you are having a tough time making stewed meat or braised vegetables, you may want to try making it on the grill. Simply place the tender cuts on top of your heat source and throw in everything in the crockpot. Cover for about 2 hours or so, and then turn the dish right side up. That’s cooking at its best. You’ll probably have to cook the dish in the oven at first to get the vegetables tender enough for frying. After that, it’s just as tender as it would be in the crockpot.
When cooking in a low heat, remember to stir constantly. Do not skip steps or overcook the stew. Flour can burn if it becomes overcooked, and your entire dinner is no better for having been cooked with too much flour. Low heat and frequent stirring will ensure you’re cooking your dishes evenly.
