Varuval is one of the famous southern dishes of Tamil Nadu, which is a popular delicacy dish in northern India and abroad. It is originated from Tamil Nadu state in the South of India and mainly served during special festivals like Onam and Diwali. Varuval recipe is a famous Tamil Nadu state recipe. In this recipe we have made a slight change by blending ketchup to the tomatoes and onions but in this version have made a little change by frying them in a shallow pan to provide it a slight crunchy and crisp texture.
The traditional preparation of Varuval is a very flavorful and aromatic dish prepared with spices and coconut. Normally the dish is cooked in a clay oven or a cast iron pan using coconut and onions. In some other variations of Varuval we also add sugar and rose water while cooking. In this traditional version we also add few drops of rose water while cooking to bring out the natural flavor of the dish and to make it crispy and aromatic. Once the preparation is completed, this dish is served with sweet rice along with some sanduskara (an Indian bread) and enjoy the mouth-watering delicacy.
Other side dishes that can be prepared with Varuval are Sake Nigrichai and Keenokkuzi. Sake Nigrichai is preparing using uncooked rice, onion, butter and a few fresh herbs and you will add all these ingredients to a clay oven or a cast iron pan and roast the whole lot to make a delicious traditional dessert dish. Keenokkuzi is prepared using gram flour, ground coconut, a few fresh herbs and coriander powder. Once the gram flour mixture is ready, it is fried in a low flame. This preparation gives a unique taste and fragrance to the food and is also known as ‘Nirvana’.
